A USDA Agricultural Research department Study (AR Jan 2014 issue) found "In general, microgreens contained considerably higher levels of vitamins and carotenoids—about five times greater— than their mature plant counterparts, ..."
More mature than sprouts, microgreens are a type of edible plant harvested shortly after germination, typically when less than 2-6 inches tall. This practice yields more concentrated flavors and nutrition than if grown to maturity.
Microgreens are also valued for their health benefits. Rich in vitamins, minerals anti-oxidents and fiber, they can be an important part of a healthy diet.
Depending on variety, the nutrition of microgreens has been reported to range from four to as high as forty times their mature versions.
Microgreens, raw or cooked, can be added to smoothies, sandwiches, salads, soups, omelets or used as an attractive garnish on multitudes of dishes.
